Tyler and I didn't have plans for Halloween this year until our cute friends threw an ADORABLE halloween party. I wish I would have taken pictures of it, but we were just having way too much fun to stop and even think of taking pictures. However, we did manage to take a few pictures before we left. I will apologize before hand for the blurry iPhone pictures. My goal was a combination of these two:

and the result?

Notice the ring? Yes I wore it all day - it was my favorite part. You can't see, but I'm also wearing nylons. A Princess Kate MUST. Adults can do halloween too ya know, and did I have fun with it or what. (Tyler, not as much)

So back in August, Tyler's family had a big family reunion in Coeur D'Alene and on our way home, we stopped in Missoula, which is the cutest college town in Montana. There's only three things I remember about this drive home: food, ice cream and crying.

Food because we found the most amazing brazilian place to eat. Since our honeymoon, we have fallen in love with the app Yelp for finding fun places to eat. We consider ourselves serious food connoisseurs. Each time we try a new restaurant, we love to critique it. We gave this one five stars.

Ice cream because we went to a popular ice cream place recommended by a few locals we flagged down.
^ I miss my wedding nails!

& crying because I was on my period and I don't even remember why I was crying. The joy of being a girl right? But the plus, is that I get hangry a lot (as my husband calls it - angry because I get hungry) and so Tyler knew that if he could get some food in me I would be much more pleasant. Which was very true.

Five on Black was fantastic. It was very trendy inside and there were a lot of hippies in this town which made for a fun feel. Some of my favorite memories with Tyler are ones like this summer evening.. spontaneous explorations in unknown places. I'm soaking in these times.. times when it's just us. Times where we have no real agenda and no one relying on us. I always say to Tyler, "I wish I could relive our wedding day. That was the best day of my life." He always responds by saying,

"Everyday is the best day of my life with you."

And he's right. Each day is better than the last.

Tyler and I like Utah. And we really like deciding spontaneously to take a trip down. This weekend, it was my sweet cousin Eva's wedding. I've really wanted to go since I knew when she was getting married but I knew the chances were unlikely with Tyler's busy schedule. But when there's a BYU game the night before the wedding, convincing is ever so easy.

So we went!

Friday night, we went to the football game and met up with some good friends Brendon and Danielle! They were so nice to get us tickets and my cute husband was in sports heaven.

I also met up with my best friend Ashlyn. I love this girl!

Saturday, Tyler and I (well mostly me) wanted to go on a hike. One of the things that I miss most about Utah is living right on the mountain and having so many trails in what seems to be my backyard! I dragged Tyler, Ashlyn and my little sister Isabelle.

The weather was beautiful and my favorite part about hiking is turning around and looking at the spectacular view. I couldn't tell if the beautiful view leaves me breathless or if I'm just out of shape from the hike.

The wedding reception was at Highland Gardens which is always a beautiful venue - and I feel this way because lately I've been loving greenery and plants of all sorts.

The wedding dinner was to die for and a foodie like me left in a very happy food coma. So good and so fun to celebrate weddings. I think i've decided that I love nothing more than a good wedding. Good food, good company. What more could you ask for?

Cheers to a great weekend with the people I love most: my family!

Perhaps I'm a little late welcoming fall, but I made this little image yesterday after Tyler and I went on a little walk because the weather was so beautiful and I wanted to take advantage of it.

Fall, never leave. Please?

Yesterday I was having one of those days where I couldn't stop complaining. I was hungry, I didn't get enough sleep, I wasn't in the mood to do homework, I didn't want to do any cleaning, and I told Tyler that I just couldn't wait to move away from Rexburg and move on with life.

Then today it hit me. Where is my gratitude? I have so many things to be grateful for.

I am grateful for an amazing family who I love, and can I just mention how lucky I am to have the BEST in-laws.
I am grateful for an apartment and for an amazing ward and ward friends.
I am grateful to be healthy, and for a healthy husband.
I am grateful for my husband who after all my complaining, took me to a chinese restaurant. (my fav)
I am grateful for a laptop, a cell phone, and technology that makes communicating and school so much easier for me.
I am grateful for the best job in the whole world.
I am grateful for a husband who loves me and cherishes me.
I am grateful for a husband who always fills my flower vase in the kitchen with fresh flowers.
I am grateful for a husband who cares, and who says, "Wanna just go cuddle & talk?" MY FAVORITE.
I am just grateful.

Life is so good and it's too short to complain and to feel negative about my circumstances. I am definitely that girl who is always looking forward to the next stage in life and once again, I am grateful for a husband who helps me to remember that every stage is the best stage, and to slow down and enjoy this beautiful life we live.

I've been crazy busy this week with school and haven't had much time to blog! Here's a little recap.

Yummy yummy fruit and yogurt breakfast.

We celebrated the Canadian Thanksgiving on Monday with a few of Tyler's canadian friends. We cheated and only had pie because 1. Pie is much more fun to make, 2. Pie is a lot easier to make than an entire thanksgiving dinner & 3. Frankly, pie is good and so is thanksgiving dinner, but we went to Costa Vida for our thanksgiving dinner.

If you know us, you know that this paperwork has been seriously such a stress in our lives. (The paperwork for Tyler to become an American) I spent close to 35 hours on this paperwork and to finally have it in the mail is the best feeling. We celebrated by getting Chinese takeout - my favorite.

I made 12 dozen cookies this week. Yes you heard right, 12 dozen. 144 cookies. If anyone is looking for an AMAZING cookie recipe, this one is it. Pumpkin cookies with a caramel icing - you guys, I can't get enough of these and neither can anyone else! I gave them to everyone and their dog that I knew because you cannot go wrong.

Remember how my mom introduced me to Skinny Pop? Yes I found it at Sam's Club and bought some yesterday. It's half way gone. Guiltless deliciousness.

On a side note, who else feels like Sam's Club ends up taking all of your money when it says it saves you? Maybe because we are a family of two. I feel like every time we go there we spend so much money. We didn't go grocery shopping last week so we had to stalk up on a lot of things. I got lots of fresh fruit and it ended up being very expensive. We spent $175 yesterday on groceries and I feel very guilty about it….

How was your weekend?

So lately I've been loving every single recipe that I've made from this site here. This time around, I made the balsamic chicken with roasted ranch potatoes. I've made this 4 times in the past month, not even kidding. Oh. My. Goodness. Tyler and I lick our plates clean, it is soooo delicious. I marinated the chicken the night before, which I highly recommend. This meal was quick, fast, easy, and can I say yummy ten times in a row? So flavorful and I can't wait to make it again.

Balsamic Chicken with Roasted Ranch Potatoes

Chicken Marinade:
2 Tbsp. balsamic vinegar
2 tsp. thyme
2 Tbsp. dijon mustard
2 tsp. garlic powder
1/4 cup olive oil
4 boneless chicken breasts

1. Put the vinegar, thyme, mustard, garlic powder and olive oil in a resealable plastic bag. Close the bag and shake to combine the ingredients, squeezing with your hands if necessary.
2. Open the bag and drop the chicken breasts inside. Seal and let marinade for at least 30 minutes or overnight.
3. Once chicken has marinated, grill over medium-high heat for 4-5 minutes a side, basting with the leftover marinade a few times as it grills.

Roasted Ranch Potatoes

2 lbs. small red potatoes, cubed

1/4 cup vegetable oil
1 (1 oz.) packet powdered ranch dressing mix

1. Preheat oven to 425 degrees F.
2. Place potatoes in a medium bowl, add oil and stir to coat.
3. Add ranch dressing mix and stir until well coated.
4. Transfer the potatoes to a baking sheet lined with parchment paper and spread into a single layer.
5. Bake for 35 minutes or until brown and crisp.

I PROMISE you will love this.

Tyler and I currently live in lovely Rexburg, Idaho. The small city of Rexburg will always hold a special place in my heart.

It is the place...
Tyler and I had our first kiss,
I fell in love with my sweetheart,
Where he proposed,
Where I said YES,
Where I received my endowment,
Where we moved into our first apartment.

It's a happy place.

Here's a few photos of our home. I don't like to call it "our apartment" as much as I like to call it our home. Home sounds so much more warm, don't you think?

We have a second bedroom that we are using as an office right now. It can easily be made a spare room so please come visit us!

Tyler and I leave Park City later this evening to head back to Idaho. I'm so sad because it's been so much fun to spend time with my family, shop and to enjoy the beautiful turning leaves right out our window.

My mom bought us all day passes for the mountain so we spent most of yesterday doing the alpine slide, the "coaster", and all of the fun things there are to do on the mountain.

My dad loves to mess with me. This is me saying, "Dad can you take it straight please?" Tyler is just loving that my dad was playing with me. I just wanted a picture!

See ya again soon Park City (hopefully!)

My parents own a timeshare here at the Marriott in Park City so we usually spend a couple weeks here each year, but I haven't been in a few years. It is so fun to bring Tyler up here. My family & I have so many fun memories here for as long as I can remember and this weekend getaway was much needed.

Driving down here today, Tyler turned to me, with all seriousness, and asked,

"So do you think that you could get into the Hobbit? I love that movie and I think that we could have a lot of fun together watching all of them."

Hahahaha. First off, this is the second time he has asked me this. But he was so serious and it was so cute! If anyone knows me, you know that I don't like movies. So we laughed and I am sticking to baking as a hobby and Tyler will stick to loving Lord of the Rings. Gender differences.. It's ok for husband & wife to have their own hobbies right? ;)

On our way to the pool & reunited with my crazy little sister.

^Please notice the Costco size chocolate covered almonds above. This weekend should be difficult as far as self-control goes. My mom seriously bought SO much food. I told her that the difference between us and them is that they can afford what I call "luxury food" - haha. In other words, buying more than necessary. So many yummy things.

Speaking of yummy things.. I've seen this Skinny Pop at the grocery store.. my mom has got me HOOKED. I don't even like popcorn! I promise it does not disappoint.

Me saying "You guys I for real can't stop eating this."

What are YOU doing this weekend??

I've just been struggling this week! I'm either messing around, wasting time on Facebook, looking here or here or spending way too much time cooking just because I love it.

Tonight I was convinced that I needed to go on a run, and then I would be able to concentrate. Just as I was going to leave, Tyler called me and said that he volunteered me to watch a bunch of babies at the nursery during institute. yes yes yes. I didn't even hesitate and I ran straight to the church.

I love babies.
Yes I counted my quick run to the church as my daily run.
Yes I ate ice cream after.
Yes I want a little tiny baby.
Now time for some homework. Wish me luck.

Fall is falling! Okay is this new change in weather beautiful or what? In Rexburg, there's a slight chill in the air, the leaves are starting to turn, and I just love it. I made pumpkin bread this past weekend and it's already all gone. (I'm like obsessed with anything pumpkin) I don't think I've ever been soo excited for the holiday season!
+ I wore my very favorite dress I got from asos. It feels like i'm wearing pj's to school which is great.
+ I walked past this adorable house today and I wanted to buy it
+ Tonight, I'm giving myself a homework break (yes I know it's only tuesday)
+ I'm making homemade rolls and this yummy jam while turning on my pandora station. HELLO yes.

Last night for our friday night date night, I was feeling very nice so we went to Wingers and watched the first part of the BYU vs. Utah State game. We then went to the Farmer's Market (a little bit of a his & hers date night) which was sooo super fun. I love farmers markets and I think it may have been the last one. So sad, but loving the fall weather. Bittersweet!

The boy got his fried oreos. I tasted a bite and did not like them. But if anyone knows Tyler, you know about his love for oreos. Wingers, the game, and oreos…. I left with a very happy husband!

Then this morning, our cute friends invited us over for breakfast & conference. You may remember Kyle & Kaloni from this post, and Kaloni's cute sister Tiahna and her husband live in our ward too! We love these people and it was so fun to spend conference morning with them. Thanks Conrads & Udalls! As conference started, Kelly (Tiahna's husband) noticed that we were all taking notes on some sort of apple product. We thought it was pretty funny!

Kaloni made these cinnamon rolls and we were all DYING over them. I've never been a huge cinnamon roll person but these were just so perfect. She even put fresh pumpkin in them. Yeah, we were all dying. She makes me want to be a better wife and a better cook.

He loooves pictures if you can tell :)

Hope you're enjoying your Saturday!
